When you make your pan of vegan mac and cheese, as tempting as it will be, don’t eat the whole pan save 1/4 for your family. In my defense, my mac and cheese is vegan, gluten-free, and uses brown rice pasta (instead of white bleached flour), so technically, I can eat as much as I want, right? ? Luckily I had to share the macaroni and cheese otherwise, I might have hurt myself eating the entire pan and ended up with a self-inflicted mac and cheese-related injury. The kids were the ones that convinced me to try again, and I am so glad that they did! I’ve tried to create a vegan macaroni and cheese recipe for a while now, but they all fell flat.
